What does me gustaría mean?
The short answer
Me gustaría usually means “I would like”. Use it to express a wish or a preference, often followed by an infinitive: Me gustaría viajar means “I would like to travel”. It can also soften a request, depending on the situation.

Keep the next verb in its infinitive form. In this pattern, you change the action rather than conjugating two verbs. Start with something you can picture doing this week.
Me gustaría aprender español.
I would like to learn Spanish.
Aprender is the infinitive. The whole action is what appeals to you.
Me gustaría visitar Granada.
I would like to visit Granada.

Notice the thing you are wishing for
With a noun, gustar agrees with the thing that would be pleasing, not with the person experiencing the feeling. Me identifies that person as “me”. A plural noun can therefore change gustaría to gustarían.
Me gustaría una habitación tranquila.
I would like a quiet room.
Una habitación is singular.
Me gustarían unas vacaciones más largas.
I would like a longer holiday.
Vacaciones is plural in Spanish, so the verb is gustarían.
A wish can also open a polite request
Me gustaría can present what you want gently, but it is not the only polite expression. A brief request with por favor is common too. Context, tone and local habits all affect how an order or request sounds.
Me gustaría reservar una mesa para dos.
I would like to book a table for two.
Reservar describes the action you are requesting.
Un café, por favor.
